Tangy Green Salad Dressing

Mmmmm this salad dressing is delicious…. It’s fantastically quick to make but packed with flavour. Really, really tangy and a little sharp even… In my humble opinion it’s best with sturdier salads like chickpea or rice salad, if you have the chance to let it sit a bit in the fridge, even better.

Tangy Green Salad Dressing

Preparation Time: 5 minutes                                                                                         Cooking Time:         0 minutes                                                                                                       Total:                          5 minutes

1 spring onion (Scallion) white part only

1/2 cup flat leaf parsley

2 tbsp tahini

1 tbsp water

juice of half a lemon

Salt to taste

  1. Wash the parsley and remove the stems.
  2. Roughly chop the spring onion.
  3. Blend all the ingredients with a hand blender untils smooth.
