This is a great sauce because it’s so versatile. It goes really well over grilled seitan but it’s also delicious on pasta. You can pair it with tofu or try it with rice. Use your imagination, it goes with almost anything! It’s also quick and easy to make which is always a plus. The sundried tomatoes give it quite a strong flavour, which I really like and I hope you do too.
Preparation: 10 minutes Servings: 4 people if used over Cooking Time: 10 minutes seitan. 2 for pasta. Total: 20 minutes
200ml cream (dairy or vegetable is fine I especially like oat cream)
6 sundried tomatoes
3cm leek (white part only)
Half an onion
1tbsp extra virgin olive oil
Salt to taste
Put the sundried tomatoes in water to rehydrate if the are dried or remove the excess oil with kitchen paper if they are in oil. Chop the onion and leek and saute in the olive oil with a pinch of salt for 5 minutes. Put everything (cooked onion and leek, cream and sundried tomatoes) in a hand blender and mix until completely smooth. Taste to see if you need to add more salt. Return to the pan and heat through. Serve.
