???????????????????????????????It’s about time I posted about this veggie staple! I’m sure it won’t be the last either. This one is tofu based but you can make so many kinds of vegeburger – the sky is the limit!

150g tofu

4 tbsp oats

Half a courgette, grated

1 small carrot, grated

4 tbsp soy sauce

1 clove garlic

Stir fry the courgette, carrots and garlic (crushed). Put in a blender with all the other ingredients and blend. It should be firm enough to form burger shapes with. If not, add some more oats. Taste to see if you need to add salt. (I didn’t) Form burger shapes and if you have time, leave to chill in the fridge 30 minutes. Shallow fry in a little olive oil and serve. You can enjoy these burgers on their own or with all the trimmings.
